  • The home cook combined seven ingredients including kidney beans and honey 
  • She placed the blended items in cake tin and put it in slow cooker for two hours

An Australian mum has come up with a ‘healthy’ slow cooked brownie recipe using kidney beans as the main ingredient – and she insists it tastes like a regular brownie.

The home cook mixed a can of kidney beans, eggs, vanilla, baking powder, cocoa powder, coconut oil and honey to form the mix before placing them in a cake tin lined with baking paper.

She then baked it in a slow cooker on high for two hours and kept it moist by placing a little water in the bottom and a tea towel on the top.

She shared her simple recipe to the Slow Cooker Recipe & Tips Facebook page and said it tasted ‘amazing’.

‘It’s wheat free, dairy free and sugar free yet tastes like brownie,’ she wrote.

Other Facebook users were very impressed with her simple recipe and said that they couldn’t wait to try it. 

‘Yum. I’ve done this in the oven and it is amazing… Will try this version,’ one person wrote. 

‘This is a must try,’ another person said. ‘I’m so going to try this,’ one person agreed.

Another said: ‘I normally make a variation of this in the oven. Awesome there’s a slow cooker version! Going to try it.’ 

How to make a kidney bean brownie in a slow cooker

Ingredients:

– A can of kidney beans

– 5 eggs

– 1 tsp vanilla

– 1 tsp baking powder

– 1/2 cup of cocoa powder

– 6 tBSP of coconut oil (I had none so actually just ended up using butter)

– Sweetener of choice (she used 1/2 cup of honey)

Method:

1. Blend all the ingredients together and place in a cake tin

2. Put mixture in a cake tin and place in the slow cooker 

3. Cook on high for two hours – put a little water in the bottom and a tea towel on the top to secure moisture
