A doctor has shared her family-favourite recipe for a chicken and leek pie – complete with mashed potatoes and her go-to seasoning that packs a ‘flavour punch’.

Dr Preeya Alexander, from Melbourne, made the dish using chicken thighs, leeks, onion, zucchini, potatoes, green peas, cheese and milk.

‘I’m on holidays and I just wanted to share some solid gentle love – a delicious chicken pie with some extra rainbows as always,’ she wrote on Instagram.

What you’ll need to make a chicken and leek pie

Chicken thighs

Leeks

Onion

Zucchini 

Vegeta gourmet stock

Frozen green peas 

Potatoes

Cheese

Flour

Milk

To make the pie, she added oil to a pan and added diced onions and garlic. She then added the chopped leeks and cooked them until softened.

Dr Alexander added the chicken which were cut into bite sized pieces, followed by her favourite seasoning – Vegeta gourmet stock.

‘The Vegeta stock is a flavour punch – I love the stuff and it adds some saltiness too… I used skinless free range chicken thighs,’ she said.

She then added a generous amount of chopped zucchini and frozen peas.

To make the creamy sauce, she mixed 1.5 cups of milk with flour and seasoned with black pepper and then poured the ‘binder’ to the pan.

Dr Alexander cooked while stirring until the mixture boiled and thickened before adding cheese to the sauce.

‘The sprinkle of cheese takes it to the next level – trust me,’ she said.

In a separate pot, she boiled the potatoes until soft.

Once the chicken mixture was cooked, she transferred it to an oven-proof dish, and topped with mashed potatoes. 

‘Sure, you can use pastry for this but I find it fiddly so I avoided the stuff and used mashed potato instead,’ she said.
