A top chef known for re-inventing classic takeaway dishes with a seafood spin has shared his take on a kebab.

Josh Niland, the head chef at Saint Peter and Sydney’s Fish Butchery, shared a snap of his mouthwatering creation after using a Yellowfin tuna kofta instead of beef or lamb.

He paired the kofta with sumac onions, tahini yoghurt, tomato and parsley and placed it on his Fish Butchery takeaway menu for one day only. 

The lemon and sumac used on the onions is a method commonly used in Turkish cooking and makes the onions ‘softer’ and tastier to eat.

The photo of the new menu item took social media by storm, with hundreds commenting on the chef’s ‘genius’ creation. 

‘That looks outstanding! This is insane on so many levels,’ one wrote.

‘This was delish. Honestly the best thing I’ve ever eaten. Please make this a regular situation,’ another added.

The 32-year-old  carefully constructed the fish sausages to make them look identical to the classic snags and shared a picture of the grilled sausage served with a slice of white bread.

‘Missing Bunnings sausage sizzles? Fish sausages coming off the charcoal grill, with grilled onions and our BBQ Sauce,’ he wrote on Instagram.

Sydney diners who tried the creation were impressed with the flavour combinations.

‘The best ever fish sausages and a creation unique to this place. I’ve never had anything like it before. The flavours are absolutely divine, you can taste the sea in them. Yummy,’ one woman wrote.

Another customer rated the sausage sizzle a perfect 10 out of 10 after she tried the fishy creation without any sauce.

‘The most sublime sausage sandwich. Texture and look similar to chicken sausage, but in taste clearly fish, though in the most subtle of ways, only slightly stronger in flavour than a mild fish,’ she said. 

After sharing the creation on social media, many couldn’t believe the sausage sizzles are made with fish, while others were amazed with his tasty creation.

‘This looks sensational,’ one wrote, while another added: ‘Complete with removed crust for all the adult children out there.’
